This article explores the profession of culinary designer, a creator who designs gustatory and visual experiences at the intersection of design, gastronomy, and art. It traces the origins of the movement initiated by Marc Brétillot, explains the difference between a culinary designer and a food stylist, and presents the career path of Manon Alvarez, a chef and food designer based in Marseille. Through her studio La Dame Bleue, Manon blends the authenticity of Mediterranean flavours, visual poetry, and a creative methodology. The article details the stages of bespoke design—from the sensory brief to prototyping and turnkey delivery—and shows how culinary design adapts to the needs of restaurants, studios, brands, and events. Several photographs illustrate the creative process: the search for inspiration, work in the kitchen, plating, and final results. One section showcases Dame Bleue's signature recipes and bold flavour pairings, such as roasted fig and smoked mackerel or beefsteak tomato and Gariguette strawberry, symbols of the sensory experimentation inherent to the profession. Finally, a FAQ answers practical questions about the role of the food designer, pricing, the possibility of working outside Provence, and adapting to specific dietary needs. The whole section conveys Manon Alvarez's philosophy: to create memorable emotions through cuisine, combining technical precision, creativity, and a love of flavour.

Culinary designer: the art of creating emotions at the table

Tips

What is culinary design?

Culinary design or " food design " is, according to the most widespread definition, "design applied to food objects"; it transforms food into a truly creative material while integrating the tasting experience in its entirety: visual, texture, smells, staging, and even social interactions.

‍

Founded in 1999 by Frenchman Marc Brétillot, the movement's mission is to break down the barriers between cuisine, design, and contemporary art. Today, culinary designers collaborationsorate with renowned chefs, production studios, and food brands alike to invent new ways of experiencing taste.

‍

What is the difference between a food designer and a food stylist ? The latter enhances an existing dish for the photo; the former designs the dish and sometimes even the ritual surrounding it from A to Z, blending aesthetics, storytelling and gastronomic innovation.

Manon Alvarez, culinary designer in Marseille

As a chef, caterer, food designer and a true Swiss Army knife of gastronomy, I try to infuse my Mediterranean creativity into every project.

From my laboratory, I compose dishes that never sacrifice the sincerity of taste: PDO olive oil (from Piedmont at my friend Emma's), sun-drenched vegetables, wild herbs, fresh fish…

I like to play with colours and flavours, to bring a poetic touch to my creations and a lot of love.

With the conviction that emotion and memorization are linked, I want each bite to tell a story to remain imprinted in memories like a refrain that one would hum after service.

Our bespoke creation method at La Dame Bleue

‍

‍

"A good dish is 50% intuition and 50% methodology.".

‍

‍

‍

Step 1: Sensory Brief

‍

‍

We transform constraints into creative avenues : brand color, season, target audience, nutritional requirements.

Visual representation of a sensory brief.

Step 2: Mood board & edible model

‍

‍

Sketches, textures, assembly tests; the plate becomes a model and the client validates the story-flavour.

‍

Step 3: Prototyping and adjustments

‍

‍

Cooking, presentation, shelf-life... we evaluate the photo rendering and reproducibility (important for a catering service).

Step 4: Turnkey Delivery

‍

‍

Documented recipe, technical sheets, HD photo shoot, serving tips. "Brigade training" option for chefs who wish to internalize the dish.

Some signature recipes from Dame Bleue

Aïoli revisited

Mediterranean encounter: focaccia - squid ink - hay-smoked eggplant caviar - salted zucchini & pickles

‍

Burnt oysters - pumpkin ketchup - lemon pearls - coral tongue & kaffir lime

Flavour combinations that break the rules

  • Roasted fig & smoked mackerel : a sweet-iodine caress that makes a "tilt" at the first bite.
  • White peach & Colonnata lard : the South in a duo, rich-fruity, perfect on a rosemary pickle.
  • Chioggia beetroot & grated bottarga : the saltiness of the bottarga illuminates the earthy side of the root.
  • Beefsteak tomato & Gariguette strawberry : a passionate red duo, enhanced with a touch of white balsamic.
My secret? Working with the contrast between texture and temperature and seeking the "third taste" that arises from the encounter. It's the signature of a modern caterer.
